Vinification method: Claudia and Alberto Carretti are the brains behind Podere Pradarolo - an estate whose wines have garnered a cult-status among the natural wine community. They work in Serravelle, a small town just outside of Parma, where they endeavor to create modern wines with ancient influence - thus their love of macerating grapes on the skins like the Romans once did.

Their "Vej" Brut Cuvée is made in the Metodo Classico - aka the classic Champagne process. It remains the only orange wine in Italy made this way! The Malvasia grapes macerate on the skins for 60 days, and the finished still wine is aged about 18 months on the lees in amphorae. After disgorging, the sparkling wine is bottled unfined, unfiltered, and with zero S02.
