The grapes for this premium cuvée grow on a fairly steep plot close to the winery on young shell-limestone. The grapes are destemmed and macerated on the skins for only four days.
Malolactic fermentation and aging on the lees in old barriques and steel
After pressing, the wine went to a 600l barrel and an old barrique, which stayed until March 2019. Sylvaner was racked and blended into these two barrels with about 10% of the 2018 vintage before bottling it.
