Vinification method: The grapes are grown organically on brown clay loam soils and limestone subsoil.
Grapes undergo whole berry fermentation with native yeasts in open top stainless steel, 7-8 days of skin contact and an additional 6 months of aging in stainless steel. No added SO2, unfined, unfiltered.
Tasting notes: light bodied, mineral, honey blossom, tangerine zest
Pairings: grilled salmon with wild asparagus, saffron risotto
