Vinification method: As the futuristic label indicates, Lauren & Simon Sharpe approach winemaking with a scientific precision and visionary ideals. After studying the aromatic molecules of Marlborough Sauvignon Blanc at Adelaide University, Lauren needed a break from the grape. She made her way to Southwest France to help make natural wine from other varietals for the next decade. But after tasting exceptional examples of Sauvignon Blanc from legends like Riffault, Bain and Vatan, she fell in love all over again. She returned to New Zealand, where she and Simon rebelled against the mass-production industry in the region. They source grapes from the Churton vineyard, working closely with Ben Weaver to find the best examples of the grape.
Grapes are hand-harvested, with 60% undergoing 7 days of maceration, while 40% are whole cluster direct pressed. The juice ferments in neutral oak and stainless steel with indigenous yeasts, before aging 11 months in those same vessels sur lie. Bottled unfined, unfiltered, with no added S02.
