The fruit is hand-picked and gently crushed by foot, then left on its skins for around twelve hours — a brief maceration that lends subtle texture and grip without weight. Fermentation is entirely spontaneous, with no added yeast, and the wine matures on its fine lees in neutral French and Austrian oak barrels.
