Vinification: The wine is a collaboration between Antonio Sousa and Savio Soares. Antonio is a permaculture farmer in an obscure region called Baião. The wine is macerated and aged for nine months in an amphora. This wine is made with no additives or adjustments other than ground chestnut flowers to help stabilize the wine allowing for just a small sulfur addition of under 10 mg per liter.
Tasting notes: medium bodied, layers on layers, dried herbs, dried apricot
