Anapea Village "Khikhvi" 2020





Vinification method: Anapea Village sits beside the quiet flows of the Apeni River, and is in the fertile Alazani Watershed. Khatia Darguashvili and Gocha Tskitishvili started Anapea Village in 2013, when the family bought abandoned, uncultivated land in Kvareli and began revitalizing it. They planted vineyards and built a winery with a mission to rehabilitate the traditions of Georgian winemaking. From the start, they've farmed organically, with only indigenous varietals. Harvest typically occurs in early September and is completed by hand, with lots of help from the entire family. They have been members of the Georgian Natural Wine Association since 2015.

Khatia’s favorite grape, the hand harvested Kikhivi grapes macerate for 90 days in 2 sets of qvevri. For fermentation, qvevri are buried just below the earth's surface, with a warmer ambient temperature. Then the wines are racked off the skins and gross lees to another set of qvevri, buried 6 meters below ground at a cooler temperature. Bottled using gravity. Unfined, unfiltered and minimal added SO2 as necessary.
