The destemmed bunches macerate together for 36 hours before a slow, gentle pressing in a manual vertical basket press. Fermentation takes place in stainless steel with no temperature control, and the wine is then raised across three vessels — roughly half in steel, a quarter in neutral chestnut barrels, and a quarter in clay tinaja — for added texture and complexity.
