Vinification method: This blend of Sauv blanc, Marsanne, and a skosh of Chardonnay is just as fun and lighthearted as the name promises, but flor aging and used oak brings serious textural and aromatic complexity not to be discounted. 2020 Marsanne from the Humis Vineyard in Heathcote is fermented 4 weeks on the skins and aged under flor. 2020 Sauv blanc from the Galli Estate in Sunbury sees two days of maceration and 18 whole months under flor. The two were blended together and bottled with a touch of 2021 Chardonnay must for fermentation in bottle.
