Vinification method: The Gewürztraminer grown in "Kaefferkopf," an Alsatian Grand Cru vineyard, is planted on a mix of clay, limestone and granite soils. The professional and personal duo of Aurélie Foyolle and Arnaud Geschickt raise their family (and their estate's vines) in nearby Ammerschwier, which is also where fermentation took place.
The grapes undergo spontaneous fermentation with indigenous yeasts and are macerated for a month in century-old "foudres"(massive neutral oak casks). They then age for 12 months in those same foudres. Unfiltered, unfined, minimal SO2 added.
