Vinification method: Brothers Periklis and Stergios are the current winemakers of Domaine Tatsis, a winery that has been in operation since 1924, after the disintegration of the Ottoman Empire. Their grandparents started with 4 hectares of vines that have since grown to 14 after the brothers' father took over in 1996. Periklis is the vineyard caretaker, while Stergios handles the cellar processes. Together, they produce wines that experiment with Greek traditions while remaining steeped in the country's long winemaking history.

The Malagouzia grapes are grown at 250-300m above sea level. When they reach optimum ripeness, they are harvested and sorted by hand, gently crushed and macerated with the skins for 35 days in stainless steel. It then ferments and remains on its lees for 12 months in oak barrels. Bottled unfined, unfiltered, no added S02.
