Vinification Method: Fabien Jouves is a fifth-generation winemaker located in the southwest of France in the village of Trepoux-Rassiel, about 15 minutes away from Cahors. In 2006, he took over his family's 44-acre estate and converted it to organic and biodynamic farming. In this region, Malbec is the king of grapes. Still, Jouves aims to reveal many different expressions of Malbec and the other thriving white wine varietals in the area when he selects his parcels.
The biodynamically grown varietals from Jouves’ vineyards are all hand-harvested and taken to the cellar where they are destemmed before pressing. Maceration takes place in stainless steel tanks over the course of 3 months. Then, the wine is transferred to large oak foudres to continue fermentation for 6 months. All indigenous yeasts. Bottled unfiltered, unfined, and with no added SO2.
