Vinification Method: Winemaker Fabio Ferracane was raised in the vineyard. His 3-hectare family vineyard is located in Marsala on Sicily’s west coast, and he’s become the third generation vignaiolo to farm it. However, where his father sold most grapes to other vineyards and kept a few vines for family consumption, Fabio has helped increase the winery’s production. He embraced ancient techniques that predate the market for the infamous sweet Marsala wines that exploded in the 1800s, instead farming the grapes organically and without filtration or sulphur addition.
“Foddreé” is a Sicilian word translating to a fool or crazy person - a reference to Fabio’s genius or madness in producing a sparkling wine in the pet-nat method. The Catarratto grapes are hand-harvested in the third week of September before destemming and fermentation with indigenous yeasts in steel tanks. Before the fermentation ends it is bottled to become sparkling. Unfined, unfiltered, undisgorged, no added S02.
