Grape Republic "Aromatico" Sparkling


GRAPES: Niagara, Rosario Bianco, Neo Muscat, Shine Muscat, Delaware



Vinification: Winemaker Kazuomi Fujimaki moved to Yamagata Prefecture from his home in Tokyo in 2015. After spending time in the military, opening several successful Italian restaurants in Tokyo, Yokohama, and Osaka, and becoming a highly respected sommelier and advocate for natural wine, it was time to take the next step. Transitioning to winemaking at fifty is a quite the feat, but his passion compelled him to try.

This lightly sparkling wine was made in the " méthode ancestrale," with a direct press of the Delaware grapes and a 12 hour maceration in stainless steel for the rest. When the wine reaches 12g/l of residual sugar, it is bottled to complete fermentation under crown-cap.

Tasting notes: light bodied, mango, peach, tangerine zest, candied pineapple, amazingly aromatic
