Vinification method: The Stoppini brothers are true 'garagiste' (a French term for small batch "garage made" wine) winemakers. Their first vintage in 2019 was literally produced in their garage (located in Umbria). They'd been searching for the right vineyard plot for years, and finally discovered one with abandoned old vines bearing hyper-local grapes on sandy soils near the Tuscan/Umbrian border. This wine is one of their first vintages. The grapes are fermented separately in stainless steel. The San Colombano grapes get 8 days of skin contact, while the Malvasia has 6 days. After fermentation, the wines are aged separately for 6-7 months on fine lees with occasional bâtonnage. Unfined, unfiltered. No added SO2.
