GRAPES: 54% MUSCAT, 43% RIESLING,
4% HERITAGE APPLES
SKIN CONTACT: 20 DAYS
REGION: ONTARIO, CANADA
Vinification method: Mü is a microdose of alcohol and a macro dose of aroma. A co-fermentation of Muscat and Riesling macerated on skins and bottled as one. Mü is visually rosé but literally orange. It refuses to be defined. Bottled with a splash of apple juice for natural bubbles (pétillant naturel). This Canadian stunner is really something else. Native yeasts, the wine is bottled unfined, unfiltered, and with no additional SO2.
Tasting notes: light bodied, hibiscus, pink grapefruit, wild strawberry, herbs
Pairing: crab cakes with spicy chili aioli, cranberry brie bites
