Vinification: In 2011, Toni Carbó and his wife Anna founded La Salada as a personal project. Their old family vineyard is located in the heart of the Penedés, planted at a low altitude, on clay-chalky soils. The result is authentic wines, whose personality reflects the deep relationship that Toni and Anna have with the land and the vineyard.
The grapes, which are hand-selected in the vineyard, are harvested and placed in 12 kg boxes. Once in the cellar, the grapes are cooled to 4°C for 24 hours in cold rooms. Fermentation takes place in stainless steel tanks with native yeasts, grapes are macerated on the skins for four and a half months. The wine is bottled according to the lunar calendar without sulfur and unfiltered.
