GRAPES: FIELD BLEND OF PROCANICO/MALVASIA DI CANDIA/MOSCATO/VERMENTINO

Producer information: Clémentine Bouveron and Gianmarco Antonuzzi founded Le Coste in 2004 with 3 hectares of land. Their goal was to recover Lazio's abandoned vineyards. Since then, the winery has grown to 14 hectares of land planted with vines of native Italian varietals among olive groves, chestnut trees, shrubs, and oaks.
Vinification method: "Bianco" comes from 20-year-old vineyards planted in volcanic soils, rich in iron and minerals. Once the grapes have reached optimum ripeness, they are harvested by hand and taken to the winery in Gradoli village. Fermentation begins with native yeasts in steel tanks. The wine ages in large oak vats for 5 months before bottling. Unfined, unfiltered, with no added S02.
