Vinification method: The Les Vins Pirouettes label brings together a unique collaboration of around 20 Alsatian winemakers throughout the region who release wine under one brand. The project was initially started by star Alsatian winemaker Christian Binner, who wanted to encourage young winemakers who do not have land to begin growing "negoce" wines and making wine under his guidance in small batches.
This wine was made by Raphaël Marchal at his Domaine de L'Envol in Ingersheim. Grapes are hand-harvested from 50-year-old vines, destemmed, and fermented with indigenous yeast in large wooden vats. Unfiltered, unfined with no addition of SO2.
