PRODUCER: Syfany takes the locality idea pretty seriously. Everything they use in their winemaking is sourced from the area. The acacia is logged in the area, the cooper who makes the barrels and casks is in the neighboring village. They also take the “no added agents” idea quite seriously. Indigenous yeasts, no enzymes, or orther flavoring agents, and minimal SO2 at bottling, if at all. Syfany has a commitment to organics, land preservation, community, and locality, but also has a willingness to both use the knowledge gained from tradition, bur also to experiment every year with new methods.
VINIFICATION METHOD: After pressing the juice the grapes are macerated on the skins for 3 days. Spotaneous fermentation in accacia casks followed by 6 months of aging in stainless steel. Bottled with fine lees. Unfiltered, unfined, no added SO2.
TASTING NOTES: light bodied, waxy lemon, salted honeycomb, white flowers, and a touch of salinity
