Vinification method: The name, "Naše" translates to "ours" in Czech, and is a tribute to the land and the people Nestarec so loves. Due to a cold season, the grapes were slow to ripen and to ferment (harvested in mid-October and still fermenting by June of next year) so the team decided to bottle it and let the "methode ancestrale" take care of the rest. The grapes are harvested by hand and foot stomped before macerating on the skin.. They were fermented in stainless steel before being bottled and crown capped. Unfiltered, unfined and no So2 added.
