Vinification method: Attila Pálffy is a seventh generation winemaker in the northern Hungarian village of Köveskál. P.A.N.K. (Pálffy Attila Natural Köveskál) started as Pálffy's natural wine side project, an homage to his love of punk music and culture, and quickly became his full-time job. The P.A.N.K. project is managed by Attila and his fiancée Orsolya, and their collection consists of small-batch natural wines made in experimental styles. The family's organic vineyards are on Pannonian limestone, volcanic basalt rock and red sandstone. The winery is certified organic.
"AbNormal" is made from hand-harvested Tramini (Traminer) grapes. After destemming, fermentation occurred spontaneously with native yeasts in stainless steel. The wine remained on the skins for 7 days. After removal, the wine was bottled and fermentation continued in bottle under stabilized conditions for one month. The wines remained in bottle for six months before being released. Only 386 bottles produced! Unfined, unfiltered, undisgorged, no added S02.
