Vinification method: The grapes were harvested in middle October. After crushing the grapes, they had skin contact for 24 hours to extract flavor & structure from the skins. After gentle pressing, the juice went thorough fermentation with natural yeasts in big oak casks. After lees contact and maturing for 10 months in the barrel the wine went to bottle without any filtration and fining with just a minimal amount of sulfur.
Tasting notes: light to medium bodied, juicy green apple, mineral
Pairing: oysters, grilled scallops with avocado corn salsa
