Producer information: The couple of Alice and Roland Tauss have come a long way in the natural wine world. Roland took over his Styria winery in 1991, and originally used classical winemaking method. He switched over to natural methods in 2005, claiming he wasn't satisfied knowing he was drinking product with additives and chemicals. Today, the vineyard is Demeter certified. The line of cuvees titled "Opok" are all named for the soil the vines are planted on - i.e. rocky clay and silt over chalky marl subsoil.
Vinification method: For "Sauvignon," grapes are hand-harvested into small crates, with manual selection in the vineyard. They're destemmed, left on skins overnight, and gently pressed in open pneumatic press. Both alcoholic and malolactic fermentations happen spontaneously in old neutral French barriques and 300L barrels. The wine spends about 12 months in total neutral oak casks. Bottled without fining or filtration, no S02 added.
