Vinification method: The Mtsvane grapes, one of many of Georgia's unique indigenous varieties, are harvested from 15-25 year old, organically-farmed vines rooted in clay and loam in Dimi, Bagdati, in the western region of Imereti. Artisan winemaker Kakha Tchotiashvili uses the 8000-year-old Georgian qvevri method, wherein whole-crushed grape clusters are wild-fermented and aged in a buried earthen pot with only the earth's natural temperature control and gravity filtration for 6 months before bottling without any additional fining, filtration, or added sulfur.
