Vinification method: After harvesting from the single hectare of Assyrtiko the winery possesses - and the first plantings of the grape in the Mantinia region - the grapes are macerated on the skins for 5 days with Aleppo pine resin added during fermentation. The wine is aged in oak barrels. Bottled unfined, unfiltered, and with no added S02. Only 500 bottles produced!
