Vinification method: Zeit (“time” in German) is run by Karl Fritsch, a second generation winemaker at a winery that has been practicing biodynamics since 2006. Karl made his first wine in 1992, at the age of 24, and took the helm of the family estate from his father seven years later, in 1999. Since then, Karl has gradually turned the domaine into a minimal-approach winery, and in 2005 became one of the founding members of the "Respekt-Biodyvin" an association of leading Austrian and German growers who share thisl cultivation philosophy.
Grapes are hand-harvested and macerated on skins for 5 hours, then pressed and spontaneously fermented in tanks. While the fermentation is still going, the wine is bottled under crown caps to finish as pet-nat. Released after 5 months on its fine lee. Bottled unfined, unfiltered, no added S02.
