Scovero grows his grapes in the tiny town of Bionzo, where his family has lived for three generations. The grapes for this wine are hand-harvested and begin fermentation with indigenous yeasts in inox steel containers . They spend 5 days on the skins and go through malolactic fermentation. The wine is aged for 10 total months, with 40% of it in stainless steel, 30% in new acacia barrels, and 30% in clay amphorae. Unfined, unfiltered, and a minimal amount of SO2 added.
