Producer: Folicello (Il Folicello) is the project of Marco and Antonella, based in Castelfranco Emilia in the province of Modena, in the heart of Emilia-Romagna. Since the early 1980s they have made vibrant, honest wines from organically farmed vines, and their “Buffo” line — the name means “funny” or “playful” — is their joyful take on the region’s ancestral-method sparklers.
Vinification: A skin-macerated ancestral-method sparkler from organically farmed white grapes, chiefly Trebbiano and Pignoletto, grown in the hills of Modena. A maceration on the skins lends the wine its golden hue and gently grippy texture; fermentation then begins spontaneously with indigenous yeasts and is left to finish in the bottle, trapping a fine natural sparkle. Bottled undisgorged and unfiltered. Unfined, unfiltered, with no added sulfur.
Tasting notes: light-bodied and lightly sparkling, grapefruit zest, white pepper and white flowers, with bright acidity and a gently grippy finish
Pairings: fritto misto, grilled summer vegetables, young pecorino
