Producer: Martin Vajčner farms near Znojmo, at the western edge of Moravian wine country in the Czech Republic. For eleven years he served as viticultural research director for the Czech ministry of agriculture, converting vineyards to organic farming before striking out on his own in 2022. His wines are uncompromisingly zero-zero: spontaneous fermentation, nothing added and nothing taken away.

Vinification: Grüner Veltliner from the organically farmed Stará vinice (“old vineyard”) in Těšetice. The fruit is hand-picked and gently crushed by foot, then left on its skins for around twelve hours — a brief maceration that lends subtle texture and grip without weight. Fermentation is entirely spontaneous, with no added yeast, and the wine matures on its fine lees in neutral French and Austrian oak barrels. Unfined, unfiltered, with no added sulfur.

Tasting notes: light- to medium-bodied, green apple, white pepper, lime, dried herbs, with a saline mineral finish

Pairings: herb-roasted chicken with cucumber salad, grilled asparagus with lemon, Gruyère
