Producer: Galactic Wines is the micro-négociant project of winemaker Miguel Viseu and Leli, based in the Minho in Portugal’s far north — the green, Atlantic-cooled heart of Vinho Verde. Saravá began in 2018 as a pair of homemade wines and stays small, personal, and joyful; its name is a Brazilian expression of blessing and good energy.
Vinification: A skin-contact white from the Minho’s classic grapes, 70% Loureiro and 30% Trajadura. The destemmed bunches macerate together for 36 hours before a slow, gentle pressing in a manual vertical basket press. Fermentation takes place in stainless steel with no temperature control, and the wine is then raised across three vessels — roughly half in steel, a quarter in neutral chestnut barrels, and a quarter in clay tinaja — for added texture and complexity. Bottled unfiltered, with only a whisper of sulfur (about one gram per hectolitre) at bottling.
Tasting notes: light-bodied, lemon, green apple, white peach and orange zest, with a saline, gently grippy finish
