Producer: Dominik Held farms in Rheinhessen, Germany’s largest wine region, where he belongs to a young wave reimagining what these gentle hills can do. He works organically and with a light hand in the cellar, chasing wines that are honest, expressive, and easy to love. He thinks of Cuvée Weiss as a fingerprint of the whole estate — a wine meant to capture, in one glass, the character of everything he grows.
Vinification: A blend of roughly a third Huxelrebe and a third Müller-Thurgau, rounded out with Silvaner, Scheurebe, Chardonnay, and Weißburgunder. The aromatic Huxelrebe and Scheurebe spend two weeks on their skins, while the rest of the fruit is gently foot-stomped and pressed straight away. The wine then ages eleven months across a patchwork of used barriques, stainless steel, and fiberglass, with just a whisper of sulfur (10 mg/L) added before bottling.
Tasting notes: medium-bodied, white peach, honeysuckle, dried apricot, orchard apple, and a gentle whiff of spice
