Vinification method: Kobatl is an organic "gargiste" or garage winery, started by Michael Kobatl. He works with only fungus resilient grape varieties (PIWI) on a 3.3 hectare estate. Their property has an apple orchard alongide pristine vines, with lush grasses that are happily grazed by the family sheep Hanni, Franni, Ganni, Sanni and Nanni. "My Dirty Siva" Is a layered pun - "siva" means grey in Slovenian, and the grey Souvignier Gris grapes grow near the neighboring country's border. It's also a jab at classical winemakers, who tasted his wine and couldn't help but love it - despite the fact that the unfiltered wine looked "dirty" to them.
The grapes are hand harvested into small crates, and brought to a cold room in the winery to rest for a day. The grapes then cold macerate for 3 days on the skins with twice daily punchdowns. After pressing, they age in neutral oak barrels on the full lees for 13 months before being racked and aging 2 more months on fine lees. Bottled unfined, unfiltered, with no added S02.
