Producer: Denavolo is the personal project of Giulio Armani, the celebrated winemaker behind La Stoppa, founded in 2005 on the slopes of Monte Denavolo in the Val Trebbia hills above Piacenza in Emilia. Armani is one of Italy’s great champions of long-macerated whites, coaxing structure, depth, and aromatic complexity from extended time on the skins.
Vinification: A field blend of aromatic local whites, led by Malvasia di Candia Aromatica with Ortrugo, Marsanne, and others. The destemmed grapes macerate on their skins for several months in tank, with regular punch-downs and a spontaneous fermentation powered only by indigenous yeasts. The wine is then aged in stainless steel on its lees, preserving freshness and aromatic lift. Unfined, unfiltered, with no added sulfur.
Tasting notes: full-bodied, dried apricot, orange peel, chamomile and almond, with firm tannins and a savory, herbal finish
Pairings: braised lamb with olives and herbs, wild mushroom ragù with polenta, Taleggio
