Vinification Method: The fruit is harvested entirely by hand from old vines planted in nutrient-dense Opoka (marl and sandstone) soils. Grapes are picked late in the season to ensure maximum flavor complexity and structural maturity.
Movia ages wine for four years in used Slovenian oak barriques, letting it rest undisturbed on its lees without racking. Aleš Kristančič moves the wine only during a new moon, siphoning by atmospheric pressure without pumps or filters. After oak aging, Chardonnay and Ribolla Gialla are blended, and secondary fermentation is triggered in the bottle using fresh grape must—never added sugar or commercial yeast. The wine is bottled bone-dry, with no sulfur or preservatives, and yeast sediment left inside acts as a natural antioxidant, allowing the wine to evolve until the consumer performs the final disgorgement at home.
