Vinification: Grapes were picked early in order to give freshness and good acidity and were pressed at 0.6/0.7 bars for the base of the Gargànte “sur lie”. The juices fermented with no addition of selected yeasts. Aside from racking in the waning moon, no other activity was carried out in the cellar. The bottling took place in February 2018 and the second fermentation occurred in the bottle.
Tasting notes: light bodied with some backbone, great aperitif, fine and persistent perlage, citrus notes, fresh, great structure, quince, orchard flowers
