2021
GRAPES: 100% FURMINT
SKIN CONTACT: 14–30 DAYS (SPLIT)
REGION: TOKAJ, HUNGARY
Producer: Szóló is the work of winemaker Tímea Éless in Tokaj, the legendary volcanic region of northern Hungary. Farming is certified organic and increasingly biodynamic, and Tímea bottles each of her single vineyards under an elemental name tied to its soil and character. “Tűz” means “fire” — a nod to the volcanic rock that anchors the old Bohomál vineyard in Tállya.
Vinification: 100% Furmint from forty-year-old vines rooted in rhyolitic tuff and andesite. This is a skin-contact Furmint with the maceration split in two: half the fruit stays on the skins for fourteen days, the other half for a full thirty. Both halves then age two years in used oak barrels, and the wine is bottled with no clarification, no filtration, and zero added sulfur.
Tasting notes: full-bodied, quince, dried apricot, orange peel, beeswax, and a smoky, smoldering volcanic minerality
Pairing: paprika-roasted pork
DRINK: NOW TO 2031
